All of the oxygen sensitive nutrients are negatively affected by the juicing process. This includes hundreds of phytonutrients known as anti-oxidants, and many of the water-soluble vitamins.
Some nutrients become more available as a result of juicing, since the mechanical digestion of juicing is more efficient than that of chewing.
