There are harsh chemicals in onions and garlic to which many people are extremely sensitive. These substances are irritating to the eyes, nose, and throat, and for some people, the entire digestive tract. Some chemicals in garlic are thought to discourage communications between left and right brain hemispheres. Fresh from the ground, especially when partially dehydrated, the negative effects are minimized.
