It's personal choice whether to transition fast or
slowly.

Surely you could get enough calories from potatoes and
other starchy roots like butternut squash, sweet
potato, carrots etc, plus cooked greens. I know I
could. It's great that you are already off grains;
roots and cooking-type greens are far preferable.

What you describe is simply cooked 811, followed
successfully by many, and infinitely healthier than an
animal-produce based diet. Just eat vegetables,
cooked or raw, and within a few days you will be able
to start increasing fruit without the drowsiness you
anticipate. Why not start on a clean, cooked vegan
diet at the start of the week and aim to substitute in
one fruit meal by the weekend?

Beware of putting obstacles in the way so you never
start!
