Damage is challenging to quantify. Blending for a moment is different than blending for 5 minutes. Different blenders use different actions in order to be effective, and some oxidize more than others. Chewing also results in oxidation.
Blending makes many nutrients more available than they would likely be if we simply chewed our food, as the mechanical digestion of blending is more efficient, and more thorough, than chewing ever could be.
Why do you ask?
