The nuts you purchase have been dehydrated so that they won't go moldy. When you rehydrate them, by soaking, you make digestion somewhat easier, not because of anything to do with enzymes, but simply because they are not so concentrated once soaked.
Usually I blend nuts if I am going to use them in a recipe, but if I choose to eat some nuts, I just eat them as is. I don't think we've adapted, but that is another story.
