First off, congrats for getting started on your fitness. The answers to your questions are actually very simple, so don't worry. You can lose weight and build muscle at the same time, yes. Your body will get the extra calories it needs from your body fat. But you must supply enough protein for growth, so therefore you don't want to grossly under-eat in an effort to lose weight rapidly. Slow and steady is the best.
Any type of exercise will do, there is no "best." They all work, and all help you develop exactly and only what you are training for. If you run, you'll get better at running. If you swim, you'll get better at swimming. If you strength train, you'll get better at that.
Along the way, you might want to consider reading my book, "Nutrition and Athletic Performance."
