Welcome. The learning curve is steep, but not that steep, and you can surely reach the top, as so many have before you. I'd use the experience of running out of fruit and veg as motivation to learn to better prepare. Hunger is a great motivator, and you'll learn quickly to keep some emergency food in reserve. Perhaps you'll store some dates in your car, or dried figs. Heck, you could always put an extra bunch of bananas in the car. Going back to cooked food isn't going to help you learn to be prepared to eat raw. As for parasites, I'm not convinced from the info you provide that they are a problem for you. The only way to be certain is by stool sample. Your doctor can get you the necessary kit.
