Micromanagement of nutrients and foods down to individual percentage points is more counterproductive than productive, in my opinion. If you wish to utilize tomatoes and cucumbers as tender greens, you are free to perform that experiment, and do let us know the results five or ten years down the line, please. The recommendations in The 80/10/10 Diet are for leafy greens such as lettuce and celery. The fruit/vegetables, in my opinion, are a separate category. I give no specific quantity or percentage recommendations for them.
