Hello! My name is Karin and I am an excited vegan who is transitioning into a fully raw diet. I have been vegan for 5 months now and have been about 70% raw for about 2 months. Sometimes I get bored with the raw foods and don't know how to change it up to make it more exciting. I have a strict budget so I mainly keep a stash of fruits such as apples, bananas, mandarins, lemons, blue berries and pears. Then for my vegetables I regularly buy either a collard green or kale, tomatoes, bell peppers, carrots, cucumbers and avocados. Some spices I have are cinnamon, tumeric, and pepper. The only tools I have right now are a blender (Nutribullet), cutting board and knife. As you can see, I don't have much variety to work with. So I mainly eat salads and smoothies and while I love eating them, I get bored sometimes and want to know if you have any recommendations for ways to change things up or make my veggies more exciting with limited supplies and foods. When I do get bored or have cravings, I eat whole wheat crackers and natural peanut butter and I want to steer away from giving into my cravings. So I am looking for simple recipes and ways to change up my meals so that I do not get bored. Thank you!!
