i like to make simple tomato-based dressings (e.g., tomatoes, carrots, fresh herbs, some lemon), then pour it in a strainer and let the water drain for 10-15 minutes. gets really thick and creamy then, plus you can eat the juice that comes out as a soup before the salad :) i prefer to use this wonderful sauce on zucchini/cuke pasta though (since it reminde me of classical thick marinara sauce), but on top of salad is fine as well.
