We have a natural affinity for sweetness, which is fulfilled by fruits. Sourness can indicate unripe fruit, and is generally unappealing. We have a natural affinity for saltiness, which is fulfilled by greens & vegetables. Bitterness can indicate toxins, and is generally unappealing. It can take a while to appreciate the saltiness of greens/veg, especially after spending time (usually years) eating a "standard" diet that is extremely high in salt. But once a taste for greens begins to build, there is an appeal (non-sweet but watery & fresh, salty) that is not met by fruit.
