The plan is simple. Once you are out, start exercising, focusing on strength exercises for the large muscles of your body. No need to measure body fat. Eat enough to hold your weight, and you will shift from fat to muscle over time.
The symptoms you describe along with the history you mention sounds like "malabsorption syndrome."

Let's build your health for 6-12 months before we even talk of fasting.
