Most withdrawal symptoms last just 3-5 days, as a rule, though salt withdrawal can take longer because there is an hormonal component. Your body must produce sufficient quantities of the hormone aldosterone in order for you to satisfactorily spare sodium. You might do well to each generous quantities of celery during the interim. Of course, instead of cold turkey, you could always just gradually cut back on your use of salt.
