If you want to gain fat: eat more total calories each day.
If you want to gain back the water weight you lost: go back to eating salt and cooked starches.
If you want to gain muscle: add strength training into your routine, or replace some of the cardio with strength training, and eat enough to support that weight gain. BTW, with additional strength training you'll likely find you sleep better too.

I'm thrilled you're with us, and yes, it is that simple.
