That author is just playing games with numbers. He claims to agree that a healthy diet for humans is similar to the traditional diet of chimps. He posits a chimp diet of 75% fruit & 25% "pith". (Pith is the stems of plants, not the leaves, so I don't know exactly what he means here. He also says these numbers are based on "dry weight," so again it's hard to know the real meaning.) He then states that ripe fruit is composed calorically of 30% sugars, 20% protein & 50% fat. That's just flat out wrong. Then he pulls the old switcheroo - using those nonsense numbers for chimp food while using our generally accepted numbers for human food. So somehow in his analysis a chimp diet of 75% fruit leads to a recommendation of a low fruit diet for humans. To him, a high-fruit diet for chimps is low carb, but a high-fruit diet for humans would be too high in carbs. He's pretending to agree with the idea of humans eating like chimps while recommending a diet very different from that of chimps, and he does this by re-jiggering the numbers of the chimp diet. (BTW, the chimp diet in the wild is much higher than 75% fruit, measured calorically.)
