In my DVD sets, Raw Nutritional Science, and Making Friends with Your Food, I explain these issues quite clearly. In theory, all proteins are broken down initially to amino acids, but a small percentage of those can then be utilized for fuel. Proteins typically form "enzyme resistant bonds" as a result of exposure to heat. These cross linked bonds cannot be broken down into amino acids.
