I recommend starting with my books, and the references in them. Have you read Nutrition and Athletic Performance? The 80/10/10 Diet?

Essentially, the issue is that as dietary fat rises, oxygen and sugar uptake, transfer and delivery effectiveness drops. Not good for performance or health.
