I do not use the method you mention in organizing my food combining guidelines, exactly. It is not the acid that makes the problem, but typically it is the huge disparity in water content. Eating citrus with banana, for example, leaves many people with a sour stomach. The second issue is a matter of the other foods you are combining at that meal. So, for instance, where citrus will combine well with nuts, banana will not. For people who combine citrus with banana, they must then decide if they are adding nuts to that dish, and can easily be fooled into thinking that this too is a good combo. Hope this helps,
