The problem people have when being on this kind of diet, is yes,
all fat on the body strips away, so if you don't have muscle, it
really shows. Looking lean and ripped is all well and good, but
when you're 145 lbs, I'm sorry, that's not very manly, IMO.

You need to bulk up. Like Doug suggested, low reps, and only
using compound movements works best. Don't waste your time
doing leg extensions and dumbbell curls. Do squats, deadlifts,
overhead press, bench press, and barbell rows. Keep the reps
below 5. Any higher than that and you're building endurance, not
brut strength.

This type of workout will maximize growth hormone and
Testosterone levels, giving you strength and size.

Food doesn't matter much, as long as you're eating enough to
satisfy your caloric needs. You said you're taking in 2700-3000,
which is PLENTY (unless you weigh 250 lbs, or run 10 miles
every day).

I know guys who have gotten enormous off cereal and toast.
Food doesn't matter. Protein shakes don't matter. It's all
nonsense to make people money. I have built incredible muscle
and strength off vegan food. In fact, my best workouts come
when I adhere to a diet such as this one promoted by Doug
Graham.

Don't listen to the people who tell you, you need meat or whey
protein shakes. They're clueless people who have never thought
outside of the box.
