I find that celery, cucumber, and lettuce travel really well in my carry on, and I am happy for the volume. Grapes, fuyu persimmon, and apples travel really well, as do clementines and other such whole citrus. I like to stay really well hydrated when I travel.
I don't usually bring any nuts or seeds or dried fruit, but they do travel really well and are lighter in your luggage than fresh foods.
