Sets of 8 are good for warmup, but for hypertrophy you are going to want to get to heavier weights and fewer reps. You've got to really challenge yourself. Meanwhile, as long as you are progressing, alternate days may be enough rest. If you are not, you might consider taking an extra day of rest. How fast are you hoping to gain? 6Kg in a year is what professional body builders hope for, and rarely reach. If you aren't training at their level of intensity, frequency, and duration, you must lower your sights accordingly. 2 or even 1Kg would be quite apparent.
