Dates can be purchased fresh, dried, or even rehydrated. Most are dried, at least a bit, for optimum shelf life. I'm not suggesting that you not use them, just be aware that fresh juicy fruits make the best choices, and that dates and other dried fruits can fill the gaps when you can't secure sufficient calories, need sweetness, want a specific flavor, or need a texture only available from dried fruit.
