It is not about always tracking exact percentages. It is about
a minimum 80% carbs and a maximum 10% protein and a
maximum 10% fat, so that leaves room for a lot of variation.
And, very importantly, it is about long-term averages, not
the ratio of any one meal or any one day or even any one
month.
But, yes, perhaps the exact numbers 80-10-10 are used
because they are easier to remember than calling it "78 or
79 or 80 or 81 or 82 or 83 or 84 or 85 or 86 or 87 or 88
or 89 or 90 - 4 or 5 or 6 or 7 or 8 or 9 or 10 or 11 - 4 or 5
or 6 or 7 or 8 or 9 or 10 or 11, give or take, on average."
There are hundreds (probably thousands) of studies that
point towards a ratio in the neighborhood of 80-10-10 as
being best for humans. The China Study book cites several
hundred studies, and is a good place to start for researching
this.
Once a person gets the hang of eating this way, there is no
tracking of anything. Paying attention to the numbers for a
few days whenever a new food comes into season or is
otherwise encountered can be useful, but then it becomes
second nature with no tracking needed.
As for our ancestors, really just about all creatures on earth
tend to eat a certain way, on average. This is true of
bonobos, chimpanzees, etc., so it is very likely that our
ancestors a million years ago also tended to eat a diet that
happened to average a certain ratio of carbs/protein/fat with
no tracking needed. Modern humans have the greatest
variety of food available to us of any creatures, ever, and
huge marketing forces that want to manipulate our choices
for financial gain - a little guidance in making healthy
choices is needed more by us than by any other animals.
