The problem likely stems from an imbalance in neurotransmitters (acetylcholine, serotonin, GABA) resulting from inadequate intakes of their nutrient precursors (choline, tryptophan and glutamate).
This diet is low in choline (you would have to take in about 4 kg (10 lb) and more of edible portion of bananas a day to meet public health recommendations), and from malabsorption and low intake tryptophan is also likely insufficient.
So, people with higher needs of these nutrients will eventually run into these problems, and more.
