About the basically important fatty acids: http://www.ncbi.nlm.nih.gov/pubmed/20620762
About the conditional nature of the dietary need for polyunsaturates: http://www.ncbi.nlm.nih.gov/pubmed/11177196
Linoleic acid (LA) plays an important part in maintenance of epidermal integrity by intervening in the cohesion of the stratum corneum and in prevention of transepidermal water loss. Adequate Intake for LA is about 12g per day for women (and 18g per day for men). This amount is not easy to get with 811rv type of diet without the use of seeds (i.e. hemp) or nuts (i.e. walnuts); or, for those that do not care about the "fractionated food"-philosophy, unrefined oils can be used, since nuts and seeds can cause digestive issues in some, especially when combined with fruit. Software like "cronometer" can help you monitor the amounts supplied by the food you eat.
How to know? You go by the symptoms (and understanding). Fortunately one can dig information from the internet. Then you experiment. These things may be highly individual.
Also worth considering when attempting this type of diet, is the vitamin choline.
