Any vegetable that you are willing to eat raw is really OK by me. I have my preferences, and am sure you have yours. The starchiest ones, such as pumpkin or other winter squashes, might give you digestive trouble in terms of combining, but even they are fair game. Still, you'll find that certain veggies will become your staples, and the others will be treats for occasional use.
