Raw simply means that the food was never exposed to heat (some define it as never exposed to certain amounts of heat such as 118 degrees F) Living is food that is still alive. For example if you take an apple off of a tree and stick it in soil that is kept humid and fertile eventually it will sprout into a new apple tree (at least the seeds will). If you put a live potato in water it will eventually sprout into a plant with roots and shoots, etc. Fermented foods will not sprout into anything but a pile of smelly rubbish.
