The "apples and oranges" was based on a different topic: Usually people consume little fruit and therefore studies on carbohydrates vs performance (and other health parameters) are done with starch (glucose). To project these findings onto other sugars, i.e. fructose, is misleading, because fructose is metabolised differently. So, one has to distinguish between the different flavours of 80-10-10: starch based or fruit based.
Fruit acutely increases fat in the blood: http://www.ncbi.nlm.nih.gov/pubmed/18076252 Fructose is metabolised differently (vs glucose): http://www.sciencedaily.com/releases/2008/12/081209221742.htm
