However, not all people are athletes. Fructose is very taxing on the liver, as most of it is processed by the liver. Also, VLDL and free fatty acid concentration will increase significantly after fructose (from fruit) feed.
What you do is projecting starch (glucose only) based data onto all types of sugars. This is like comparing apples and pears.
Judging by what M.Phelps eats, his fat intake is quite high :D
