This is why I have so many questions about oils / fats.
I agree with 80/10/10 very much. It is just the mechanics of how the
body processes oils, and why as a 40 year old everything can be going
wrong in the last 3 years, but not in the 37 previous, even though I
have been a Vegan for 4 1/2 years and done very well. How my young
to middle aged body didn't gain weight, didn't have insulin resistance,
but suddenly I became old and the body stopped working?
I do see after reading the book how so many oils can sneak in on the
Vegan diet, but definitely not more than I had been eating prior to
Veganism, what with all the pastas and cheese, milks, etc I ate.
Going 80/10/10 definitely cuts out any of the excess fats that snuck
in my Vegan world.
Again, my brain is always trying to understand how things work, and
that is at the center of all these questions. 80/10/10 does make the
most sense of all to me, it was just this question that is nagging at me
because I don't understand why the body processes fats different at
37-40 than it did at 20-30 or younger.
Thanks for your help, I do appreciate it very much. I will stop harping
on it now.
