Are you really certain that eating fermented food increases gut flora? I'm not. Most fermented foods are heavy on salt, and cannot be considered health food. But think about it. There you are, out in a cabbage field picking cabbage and throwing them into a truck. When you grab the fiftieth one, instead of being firm, your hand goes halfway through a soggy mass. "Wow," you say to yourself, "this one is really fermented. I'm going to eat this one." I don't think so. Personally, I'll stick with fresh vegetables over ferments, every time.
