Subject:         struggling with a question about fats / oils

Just first want to say thank you to Dr. Graham for answering my questions,
and thanks to all the others who have answered as well. Much appreciated.

So I have been a Vegan since Jan. 2008. I started the 80/10/10 a couple
weeks ago after learning some great things at Optimum Health Institute.

I could never figure out, after 4 years why I just kept gaining weight, even
doing a 22 day juice fast. I lost some weight(8 lbs) while at OHI, but I also
wasn't very stressed. Then I came home, became immediately stressed,
weight came right back. Even though I had started the 811 and kept eating
like OHI had us.

I have come to learn that one of the biggest obstacles to weight loss is
Anxiety, Stress and Cortisol (adrenalin) (dis)regulation.

I have severe PTSD and suffer from horrible Stress and Anxiety that is
unrelenting. I have had more trauma in my life than 20 people combined. I
have been told by 3 specialists that my Sympathetic Nervous System (fight or
flight) is running rampant and won't stop and will eventually collapse. My
adrenalin is always activated. The even bigger problem is my Para Sympathetic
system will NOT function at all, so it never cools my system off, so it can take
a break.

So, on to my question:

Fat is talked about as THE issue of problem with almost everything in
80/10/10. What I am trying to make sense of is, since most of us have eaten
a certain unhealthy way since we were born, unless parents were very well
educated nutritionally, how come the problem hits us later on? We were
probably eating more fats as grade schoolers and teenagers and were just
care free with our food. I don't agree that our bodies could just process stuff
better, quicker, easier back then. You talk about Fast Metabolism as kind of a
false idea and that there is only a slight variation between people.

Also, if fat coats the cells and doesn't allow insulin to attach, causes problems
with the speed and ability of the body to digest, again, wouldn't this have
caused SERIOUS problems since we were kids?

I had no digestion problems back then. I had NO weight problems either.

Then at age 27, suddenly a switch went off and I started gaining weight. Then
I got super happy and relaxed a few years later, and the weight slid off,
without me changing anything. Then at age 38, trauma, trauma, trauma,
anxiety, depression, stress, stress, stress, and the pounds have piled on, no
matter what I do or how I eat. I have eaten very, very healthy for over 4 years.
Very simple foods, not much processed Vegan food, mostly home made food.
I hate salt so don't use it, cut out high fructose corn syrup 10 years ago, eat
as little sweets as I can, and rarely use oil for anything. I would eat 1/2 an
avocado about every other day.

So, why don't we see rampant problems with health, weight, disease in
youngsters? I know obesity is on the rise, as is youth diabetes, but we have all
been eating poorly since the 1950's, and it only really started to affect us
when we reach about 40. Why can the youth avoid the Fat / Oil disruptive
problem, but the middle to old age can't?

How this fat / oil thing works in the body and cells is confusing as it doesn't
make total sense for what I see in the real world.

I want to make it clear that the 80/10/10 book makes great sense and I am
very much on board, but I always like to understand as much as I can about
everything I can, especially my health and way of life.

Oils / stress / trauma / anxiety ?
