The minerals in a food determine if it is alkaline or acid-forming. More acid minerals makes food acid forming. We want to eat a diet composed primarily of alkaline-forming foods. Fruits and vegetables are those foods. All other food groups are acid-forming, though a few individual foods in those groups may be alkaline forming.
