No contradiction at all. There are millions of types of microbes to which humans respond adversely. There are millions of other conditions as well to which humans respond adversely. There are millions of substances, forces, and other influences to which humans respond adversely, which are not conducive to human health, and to which, after exposure, humans will demonstrate profound symptoms of ill-health.

Contagion is quite a separate factor from exposure to contaminated food.
