Hello dear Dr. Graham,
I almost predominantly like (and eat) the core of vegetables
that is whiter, crispier and sweeter and almost avoid the
greener parts (the external leaves).

Am I missing important nutrients?
Or is ok to eat predominantly the crispier, whiter and sweeter
parts of vegetables with a small amount of very green parts
too?

Thank you very much in advance.

Augusto
