I know the drawbacks of higher fat consumption. This
is a reason why I am asking any ideas on how to make
date smoothies digest longer, with lower GI. Should I
add carrots/cauliflower etc. for thicker smoothies or
something else? I can experiment however would like to
know experts opinion.

I added my meal composition in cronometer, so my math
should be fine.
