Subject:         Starch digestion

I'm trying to understand a little about starch digestion ...

Some have stated that starch is difficult for humans to digest
compared to sugars. If so why do starches often rank much
higher in GI and GL compared to fruits? Because of the extra
effort to process the starch you might logically conclude the
process will take longer to raise blood sugar levels.

In the book (811) I remember some reference about humans not
possessing adequate amounts of digestive enzymes for
significant amounts of starch. Because of this I'd conclude
that much of the starch doesn't get digested properly. Is this
an accurate conclusion? If this is the case what happens to
the starch that isn't broken down?
