Subject:         Mangoes - Hot Water Treatment & Question About Ripening

So I recently bought 2 cases of mangoes and I am very excited to eat them, still waiting for them to ripen. But I saw the following on the side of the box:

USDA - APHIS
HOT WATER TREATED

I did some reading online and discovered that all mangoes imported into the US are hot water treated to kill pests, which involves heating them to an internal temperature of 115F, which means that no mangoes imported into the US are raw! I am very depressed about this. I am going to eat my 2 boxes, but won't eat any more because they are cooked. Mangoes are one of my favorite fruits. Guess I will be leaving the US as soon as I can.

My specific question, for Dr. Graham or anyone else who might know, is: why do mangoes that have been heat treated continue to ripen? Shouldn't they not ripen if they have been heated to such a temperature?
