Yea I know, blood lipids seem fine in most people doing this, however, people usually do not check for VLDL, which should be near range high or above; VLDL indicates the endogenous fat synthesis (by the liver from fructose). E.g. here's a comparison of raisins vs maltodextrin in a performance trial and it has been found that "The FFA (Free Fatty Acid) concentration increased significantly during the raisin trial.": ncbi.nlm.nih.gov/pubmed/18076252

So this is pretty common knowledge that fructose raises FFA upon administration, but this may not translate into chronically elevated lipids.

Anyway, to lower the GI you would rather eat the dates instead of blending them (blending makes them digest quicker), or simply use other fruits, e.g. berries (which have blood-sugar controlling properties); another possibility is to use things like cinnamon, but if you are ideologically framed and against the use of such things as cinnamon then this may not be an option.
Nuts will slow down things but digest slow and are pushed out by the fruit/fructose and since being a rich protein substrate, will cause protein utilisation by gut bacteria and that's when bad things start to happen.
