However, when these types of books or texts that you mention refer carbs it's usually starches (glucose) and not sucrose or fructose, latter being a different "type of animal".
So there is not one type of carbs (as there is not one type of fat btw).
So, 811 in the raw vegan version is not the same as when based off starches.
The same problem occurs when frutarians refer to (usually beneficial) data obtained on vegans: while a fruitarian is a vegan, a vegan is not necessarily a fruitarian and most likely is not, and such data might not be predicative in that case.
