In general fruits are not high GI foods; and some fruits (e.g. apples) are considered a low GI food. This is because of their fructose and especially free fructose contentent (like in apples). So, the more free fructose the lower the GI. However, fructose means more free fatty acids in the blood (which are known to cause insulin resistance), which is why I do not quite understand the fuzz about low fat fruit vs blood lipids vs insulin, because low fat fruit produces high blood lipids. Besides that, fat does not float freely in the blood, as the blood is a watery medium and water and fat does not mix. Instead, fat is carried inside lipoproteins (e.g. VLDL, LDL, HDL, chylomicrons).
Anyway, the glycemic load is supposed to be more important than the glycemic index, and with a high carb diet the glycemic load is always high..
