for those too lazy to click or cut and paste it says that corn is fine as a food as long as it is picked young and eaten fresh. In fact at the 2008 H&F event in Washington state there were boxes and boxes of corn which we used for several meals. Many were prepared towards the end of the event so these corn were staying in storage for the better part of a week and we still ate them.

Young fresh corn is not a grain, it's the corn that is used to make corn chips, tacos, polenta and the like that is a grain, this is a hard dry substance and not a wet fresh niblet like what we see at farmer's markets in the summer.
