Since you have been on the diet for some time, I assume you are eating enough. What is you body composition like? Weight, height, BMI, body fat percent?
Your diet sounds mostly okay. I agree that corn could be a problem, as it is a starchy grain. If you eat corn, it should either be young and raw (baby corn) or cooked (and hence toxic). If you eat baby corn, limit the amount.
An optimal LFRV diet is predominantly tropical fruits, while temperate fruits should be limited. It sounds like you are eating mostly tropical fruits (bananas, mangoes, etc.).
The thing that stands out most to me is that you mention eating "a bowl of lettuce with tomatoes, cukes and/or zukes." The additional veggies are all non-sweet fruits. How much leafy greens do you actually eat, on average over time? Are you getting at least 3% of your calories from greens? I feel that 5% or even a little more is optimal.
I also experience increased mucus production when I am running, and need to spit a lot then. I was a smoker for many years and followed many unhygienic practices, which might account for this. What you are experiencing is some kind of detoxification or homeostatic imbalance, the body is doing its job.
The link you posted looks like a scam, it reminds me of chiropracty. You just need to supply better conditions for health, and your body will heal.
Are you drinking clean water? Breathing clean air? Are you managing stress and exercising enough? Do you get enough sun exposure? Are you taking any medications?
But definitely eliminate the corn, and make sure you are getting enough leafy greens.
