Subject:         Dr. Graham acidity from cooked foods

Dr. Graham, on page 46 of The 80/10/10 Diet under the Acid-Alkaline Balance heading, it writes that cooked foods are acidic. Does that mean even steamed spinach, broccoli, or kale would be acidifying and not alkalizing to the body? What does cooking do to cause the acidity?
