Just a quickie response from me today as I am under the gun at work.
I started transitioning to 811rv almost two years ago (continued taking some supplements and using cinnamon). In May of 2011 I went full-bore, then did one-on-one consulting with Dr. Graham starting around August of last year. I did make some exceptions here and there with steamed veg and quickly learned it doesn't like me much. I also used raw nori sheets in order to partake in a raw veg sushi with my husband.
I hear you on the digestive distress. I've had that issue myself while running and it is NO FUN. I find I do best with early morning races and NO FOOD (including fruit) beforehand. If we are fueling properly day in and day out (especially re-stocking our tanks immediately after training) we should have enough fuel to go out without eating once again before hand (at least, I've found this to be true).
I know that Michael Arnstein swears by high-water-content fruits, but I stay away from those the day before a race because of the reason you stated and I stick to bananas even though I really do not care for them.
