There are different types of denaturing. Cooking results in fusion, as you mentioned, and the creation of "enzyme resistant bonds." These are indigestible.
But the breakdown of protein you experience within your digestive system is also referred to as denaturing, and it is this denaturing that renders proteins usable to the body.
