Dr. Howell was 100% accurate, with about half of what he asserted in that statement. :) I believe you missed what he was saying. Essentially, he is expressing the idea that the process of ripening equates to the process of digesting. In some foods, this is an accurate assessment, as it is in fruits. But with many starchy foods, beans and peas and corn for example, ripening goes in the opposite direction, from simple structures (sugars) to more complex ones (starches.) This is not akin to digestion, which is a catabolic process, because creating starch from sugar is an anabolic process. Calling ripening a stomach is a bit of a stretch, but he was trying to make a point. Food enzymes don't digest the food once we eat it. Not at all. Our own enzymes do that job. Multiple stomachs exist in ruminates, but for the purpose of breaking down cellulose through fermentation.
