Hi Joy,
What an exciting adventure! Good for you! :)
Carob, cacao, and maca powders are all contraindicated if you are following 811rv (the 80-10-10 raw vegan diet).
Here is something Dr. Graham posted several years ago; I trust he'd say the same today:
For a short trip, like just a week, you can get away bringing some fresh stuff, but relying heavily on dates. I also like rehydrated pineapple. You can actually make sprouts too, to get some fresh greens, and bring some greens (celery) with you. . . . For longer trips, you might want to consider making more sprouts or carrying your own dehydrated greens. If I was going for just a week these days, I would be tempted to bring little more than pitted dates. (Pit em in advance to cut the weight)."
Note he said "rehydrated" pineapple, meaning do not eat your dehydrated fruits in that state (including dates); make sure you soak them first and make sure you are drinking plenty of water so you are not thirsty and you pee 8-12x in a 24 hour period. My understanding is that dehydration may exacerbate altitude sickness symptoms (but, I could be mistaken on that one).
Have fun! :)
