A spleen deficiency, I wonder if that was my problem as well (I was never diagnosed with an underlining ailment). The symptoms that I went through were numerous but none of them were a tightness in the throat region. Did you ever do a hydrogen breath test to see if it is indeed fructose malabsorption?
Like you, as soon as I dropped the fruit everything, other than the digestive problems that made me seek a better diet, improved. I wasn't content with it though and did a 30 day water-only fast. Since then most things have improved and I haven't had issues with a predominantly raw food diet.
Give "Fasting Can Save Your Life" by Herbert Shelton a read if you have any doubts about fasting. I truly believe that it can do nothing but help your situation.
