There are various uses of the word "raw," from raw materials, to "not
roasted," to "warmed in a compost pile to 170 degrees, but never put
in an over," to "dehydrated at relatively low temperatures, low enough
to get the water out but not to roast the nut or seed," etc.

Typically, the fats in "raw" nuts sold in the stores have not been
subjected to enough heat to seriously affect their chemical structure. I
wouldn't worry about that issue.
